YUUUUUMMMMOOOO

Our lunch was too DELICIOUS not to share, recipes included!!



Pasta Primavera
INGREDIENTS
1 1/2 cup Stewed Tomatoes

• 4 Fresh Mushrooms (sliced)

• 1 cup Summer Squash (sliced)

• 1 cup Zucchini (sliced)

• 1/4 cup Olive Oil (vegetable)

• 1 cup Green Pepper (sweet red pepper julienned is what I used instead, I don't like green)

• 1 cup Onion (sliced)

• 1/2-1 tsp Dried Basil

• 2 cup Pasta (I used vegetable Radiatore from Trader Joes YUUUM)

• Parmesan Cheese (shredded parmesan cheese optional)


Servings: 4 • Ready: 30 minutes • Prep: 10 minutes • Cook: 20 minutes


DIRECTIONS


1. In a skillet, saute onion and green pepper in oil until crisp-tender.

2. Add zucchini, yellow squash and mushrooms; saute for 1 minute.

3. Add tomatoes and basil.

4. Bring to a boil; reduce heat.

5. Cover and simmer for 8- 10 minutes or until vegetables are tender.

6. Toss with pasta; sprinkle with cheese if desired.

7. Yield: 4 servings.


Grilled Shark


Simply seasoned with garlic and lemon pepper and placed on a hot grill = DELICIOUS!!

It tastes like a very tender steak!



Herbed Salmon Fillets
INGREDIENTS
1/4 (cup) butter or margarine, melted


• 2/3 (cup) saltine crackers, crushed (I used oyster crackers from Trader Joes)


• 1/4 (cup) grated Parmesan cheese


• 1/2 (teaspoon) salt


• 1/2 (teaspoon) dried basil


• 1/2 (teaspoon) dried oregano


• 1/4 (teaspoon) garlic powder

• 4 (6.0 ounce fillet) salmon


Servings: 4 • Ready: 40 minutes • Prep: 5 minutes • Cook: 35 minutes

DIRECTIONS


1. Place butter in a shallow dish.

2. In another dish, combine the cracker crumbs, Parmesan cheese, salt, basil, oregano and garlic powder.

3. Dip salmon into butter, then coat both sides with crumb mixture.

4. Place in a greased 13-in. x 9-in. x 2-in. baking dish.


5. Bake, uncovered, at 350 degrees F for 30-35 minutes or until fish flakes easily with a fork.
